Recipe: Pastor’s Wife Casserole

I got this recipe from my wife’s grandmother’s pastor’s wife. Only made a couple of minor tweaks based on experience.

3 Cups cooked mashed sweet potato

3/4 cups of brown sugar

1/2 cup of melted butter

2 eggs well beaten

1 tsp vanilla extract

1/3 cup milk

1/2 teaspoon salt

Mix and blend the above ingredients and pour into an 8″ square pan, which should be first greased with crisco.

Topping is 1/3 cup flour, 1/3 cup brown sugar, 1/4 cup of melted butter, 1 cup of chopped nuts. Mix it together and gently place layer on top, enough to hide all of the sweet potatoes.

bake for 350 degrees for 30 minutes. Will require a little time to set (10 minutes or so) after it comes out of the oven.

Clark’s Super Bowl of Chili


  • 2lbs of ground beef
  • 2 1/4 cubs of chopped onions
  • 3 TBSP of ground cumin
  • 3 TBSP of ground chipotle chili powder
  • 1/2 tsp red cayenne pepper powder
  • 3/4 tsp dried oregano
  • 1 1/2 TBSP garlic powder
  • 1 1/2 – 2 TBSP of minced canned chipotle chili in adobo sauce
  • 2 1/2 cups of water (more as needed)
  • salt & pepper seasoned to taste
  • Shredded Cheese
  • Sour cream


  • In a large dutch oven or chili pot, add a little oil and saute the onions
  • add beef and cook through
  • add all seasonings, mix thoroughly
  • add water, let it boil, then cut the heat back to medium-low
  • cook for at least one and a half hours
  • serve w/ shredded chedder cheese & sour cream
